One of my favorite meals is Grilled Country-Style Ribs; I marinate, rub, grill and glaze them. They’re easy and delicious.

Grilled Country-Style Ribs

  • 4 to 5 pounds country-style ribs
  • 2 3/4 cups Italian Marinade (recipe above)
  • 1 cup barbecue rub (recipe above)
  • 1 1/2 cups barbecue glaze (recipes below)

Place the ribs in a ziploc bag, pour the marinade over them, and tumble to coat the ribs. Marinate in the refrigerator for 4 to 6 hours or overnight. Meanwhile make the glaze.Prepare a medium-hot grill.

Remove from the refrigerator and bring them to room temperature. Remove the ribs from the marinade and shake off any excess marinade. Season all over with the rub. Grill for 8 to 10 minutes per side or until the internal temperature reaches 165º to 180º F. The last 5 to 10 minutes of cooking, glaze the ribs all over; glaze as much as you like but be careful that you don’t caramelize (burn) the sauce.

Serve with some grilled corn or a tossed salad.

Barbecue Glaze

  • 1 cup barbecue sauce
  • 1/2 cup clover or light honey

Combine all of the ingredients and blend well. Set aside and use at room temperature.
